Thin Mint Protein Shake - Dairy Free & No Sugar Added

Thin Mints.  Arguably the best Girl Scout Cookie ever made.  It's classic, delicious, and somehow it is entirely possible to eat an entire box in one sitting.  No?  Just me?  Ok Awkward.  

Every year I get that nostalgic craving for the crisp chocolate and fresh mind flavor — but to save myself the calorie bomb I came up with this shake instead.  It's so thick and creamy you may almost forget about those sweet little cookies.  I said almost. 

There is no added sugar — all the sweetness comes from the ripe banana so note that the more ripe it is before you freeze the sweeter the shake will taste.  Also because the protein comes from collagen there is no icky "protein shake" flavor or after taste.

Thin Mint Protein Shake - [Sugar Free* Dairy Free]

  • 1 super ripe banana | sliced and frozen
  • 1/2 sweet potato | cooked, sliced and frozen
  • 1 cup non-dairy milk of your choice [I used almond] 
  • 1 scoop Great Lakes Gelatin Collagen
  • 2 Tbsp coco powder
  • 2 Tbsp chocolate chips*
  • 1/8 tsp peppermint extract 
  • 1 tsp salt
  • 1/4 tsp xanthan gum [optional - makes it nice & thick] 

Toss all the ingredients together in a blender until fully mixed, pour into a nice tall glass and enjoy.  Bonus points if you actually HAVE a box of Thin Mints laying around and can crumble one or two on top.  

*use sugar free chocolate chips
